MANHATTAN CLAM CHOWDER

MY FAVORITE COMFORT FOOD: SOUP!
Hello,
This is a soup I never made before and I just love it. I hope it warms your heart and soul on a cold Fall or Winter night.

Ingredients:
2 T Olive Oil
1 Zucchini Finely Diced
1/2 C diced Yellow Squash
Carrots (Approx. 2) Diced
2-3 Ribs of Celery w/Leaves
2-4 Cloves of Garlic Diced Finely
3-4 Cans of Bumble Bee Diced Clams (6.5 oz.) WITH JUICE!
1 Large Can Vegetable Juice (V-8)
1 Small Can of Tomato paste
2 Large Potatoes (Diced)
3-4 T of dried Parsley (Fresh is Better)
Salt, Pepper, Onion Salt, Garlic Power Cayenne Pepper

Directions<a
Pour oil in big soup pan and brown all the veggies except the potatoes. Then add the Vegetable Juice, Tomato Paste and 1 Cup of Water. Add the Clams with Juice! Add Diced Potatoes, Parsley and Season to taste. Cook about 1 ½-2 Hours. YUM!
