CHOCOLATE TOFFEE BARS

Dear Readers,

I have been in need of some comfort due to STRESS.  Thankfully, Bosco is much better.  Thank you for all of your prayers.  I hope you enjoy this yummy dessert.

CHOCOLATE TOFFEE BARS
Preheat Oven to 350 degrees
Lightly spray a 13x9x2 pan w/PAM

1) Beat ¼ C unsalted butter and ½ C brown sugar (Splenda) at medium speed
2) Add 1 egg yolk and blend
3) Add 1 cup All Purpose Flour and ¼ teaspoon…. blend
4) Press mixture into prepared pan
Bake crust 12-14 minutes. Cool

Prepare Toffee (In medium sauce pan)
1) In saucepan add ¼ C butter and 1 C brown sugar (Splenda)
2) Add ½ C light corn syrup, ½ C evaporated milk, 2 teaspoons vanilla
3) Cook over low heat stirring constantly. Bring mixture to a boil and cook until candy thermometer reaches 265 degrees (about 10 min)
4) Pour mixture over crust and bake for 10 minutes
5) Cool

PREPARE TOPPING
1) Combine 3 (1 ounce) squares of unsweetened chocolate, chopped with 2 T brown sugar (Splenda) using a double boiler or carefully microwave it.
2) Spread over toffee and sprinkle with pecans or nut of choice

  2. Oh, I am soooo much better now that my dog Bosco is back to his old self. I really love my little white shadow!

    I freeze the bars and they are still yummy after they defrost.
